BCT Casserole (LOW CARB BLT!)

You will NEED

1 LB Center Cut Bacon (it is pricey but worth it!)

1 Head of Cabbage

1 Head of Cauliflower

3 Tomatoes

2 Garlic Cloves

1 onion

1/4 C Mayo

1/4 C Plain Greek yogurt

1/4 C Bolthouse Farms Ranch (or greek yogurt based dressing)

1/2 C Shredded Cheddar Cheese

1/2 C Shredded Parmesan


Cook your bacon (I broil mine on high until crispy in oven- then lay on paper towels to get excess grease off )

In a large skillet on stove drizzle 1 tbs olive oil turn on medium heat

Dice up all your veggies:


Cauliflower (could use riced but like to use fresh if I can)

Garlic cloves



Add these to skillet and sauté until tender.

Dice up bacon when cool enough to touch ( I just use kitchen scissors and cut small )

Then in 9 X 13 inch pan spray with nonstick and dump sauted veggies AND  bacon and Mix IN:

¼ C miracle whip or mayo

¼ C greek plain yogurt

¼ C Bolthouse Ranch (yogurt based)

Stir all ingredients well – I just use large spoon and then spread out to fit pan.

Top with 

½ C Shredded Cheddar and ½ C shredded Parmesan 

Bake in oven at 425 for about 20 minutes or until top is golden!
