OMGOSH!! I wanted to save this for my #donthatemotivate group starting on Monday but this is TOO GOOOOOOOD to not share RIGHT NOW!!! SO EASY and amazing! I can NOT take creds though. My girl, Audrey Mills, shared this idea with me and I tweaked it a bit to fit into my portion control eating plan!! HOLIDAY FAVORITE this year for sure!! Can’t wait for the fam to taste this on Turkey Day! (Yes I am hosting- yes I will be sharing some recipes!)
Preheat oven 375
In a pot on the stove place
5 CUPS of frozen mixed berries ( I did blue and black)
Add the juice of a lemon and mix over medium heat until tender and sort of sauce like-
Place this in sprayed (nonstick spray ) casserole baking dish (8X8 ish or so) In a bowl MIX
1 C of carbquik (or alternative – almond flour- coconut flour)
½ C truvia baking blend (or alternative natural sugar sub)
2 eggs
Stir this together until crumbly like Pour this over the berry mixture ( I had to use my hands and place it on top because it is quite stick and thick) Melt 3 tbs of coconut oil and drizzle on top Bake at 375 for about ½ hour or until golden on top Serve with a squirt of Whip Cream Have 1/8th of the pie with a spray of whip cream for 1 Purple 1/2 yellow and 1 teaspoon SERIOUSLY AMAZING!!
