Cheesy Chicken Cauliflower Casserole

Dice up 4 large chicken breast and cook on a skillet with olive oil

In another large skillet coat with olive oil and add in really any veggies you have on hand …I used

Brussel sprouts (half a bag chopped)

2 garlic cloves- minced

Handful of Spinach chopped

½ bag shredded cabbage

4 green onion chopped

A few handfuls of broccoli

1 carton mushroom chopped

1 bag of cauliflower rice

Sauté until tender

1-2 Cups of green beans (or a can is fine)

Add the veggies and chicken breast together and mix well with 1 can of cream of mushroom soup

Spread out in baking dish and top with a layer of cottage cheese (about half a large container) and top that with ½ Cup shredded parmesean

Bake 425 for about ½ hour or until top is golden..

This was AMAZING!!!

Have 1.5 Cup serving for

1 green .5 red ½ blue
