Chicken Cordon Bleu Casserole
Chicken Cordon Blue- with snuck in veggies
1 carton chopped mushroomS
2 handfuls spinach
2 bags riced cauliflower (frozen veggie section)
1 can cream of chicken soup
1 pouch of ranch season
Spread this out in a large baking dish (9X13)
Lay about 6 or as many as you can fit (I wished I would have added more so add a lot !)thawed out chicken breast (raw)
Mix in a bowl ¼ cup Mayo ¼ c plain greek yogurt and the other half of the ranch season pouch
Spread this over the chicken breast.
Spread half a large container of cottage cheese over the mayo
Lay a thin layer of sliced ham over this (organic nitrate free if you can)
Top with shredded Swiss or just slices of Swiss cheese
Baking can be touchy as you don’t want the cheese to get too brown before the meat is done so I would cover with foil and bake at 425 for about 30 minutes then take foil off and bake another 20-30….
THIS WILL BE A BIT WATERY- so you will want to let it set a good 15 minutes if you can before serving and FYI it is quite rich – however my family and kids LOVED IT!!! If too rich for your liking leave the ranch season out.
