Chocolate Avocado Muffin

Inspired by a @Pintrest Pin but tweaked a bit. These are not only delicious but have a low glycemic index as well. The avocado makes them rich and decadent as well as help to keep you full with their fiber content! YOU WILL not be disappointed in these muffins! The kids downed the first batch in a day and I feel no guilt as the ingredients are whole and from the earth. That is what you need think most about when trying to "diet". Does this come from the earth or was it manmade? Eat the rainbow eat from the soil and your body will be rewarded in more ways than you ever thought before.

Avocado Muffins

I used a NINJA blender - the shorter blender that comes with this bundle (this is the best blender ever! I use it for everything!

Place in the blender:

1/3 Cup Pure Maple Syrup

1 Avocado

1 Banana

3 eggs

2/3 C Butter or Coconut Oil

1/2 C Cocoa Powder

1 tsp Pure Vanilla Extract

1/2 tsp Baking Soda

Mix this well and pour into 12 Silicon Muffin Tin

Top each muffin with 1 TBS of mini chocolate chips

Bake at 350 for about 30-40 Minutes (you will have to watch this and keep checking with a fork.

Serve warm and store in fridge. I topped mine with a little almond butter even!
