Comfort food HEALTHY style

It is the season. The season of warm cozy sweaters. Cuddling up to the fire. Darkness comes so early. Comfy clothes are on immediately when I enter the door these days. Let us not also forget it is the season of wanting to eat CARBS and COMFORT foods for days. Don't act like you don't know what I am talking about. Those creamy delicious dinners and the never ending bowls of pasta sound so good about right now. The snow outside, although too early, is quite beautiful today. It also has me wanting to lay on the couch, look out the window, curl up and just snackety snack- All. Day. Long.

I leave it to the weekends for snacking mostly. However, in these winter months we like to cook and bake a bit more. We like those meals that make us feel all warm and fuzzy inside. Am I right?
