❤️Easiest SNACK you will ever make! ❤️

❤️I swear, I have to come up with new snacks for the kids and their friends every other week! I love to create recipes but I must to say, sometimes I am just looking for the easy way out people! I can not bake from scratch every single day. Unrealistic goals if you think you can.
❤️Back to my point. Bananas and apples are their go to snack most days. The boys have, I am not even kidding you, eaten 3-4 apples A DAY lately! No complaints but they must want something different once in a great while, right?
❤️Today I surprised them! They came home and the first thing they said was "Mom, it smells like something I LOVE in here!" Is that not the BEST thing a momma could hear? Yes, it is. They were all happy and it took me all of 3 minutes to prepare. The frosting is optional for this simple snack.

1 Box of Carrot Cake Mix (I used Duncan Hines with no artificial flavors)
1 Cup of water
1 container (5oz) Vanilla Oikos Greek Yogurt
Mix well and divide in muffin tin for 12
Bake at 350 degrees for 20 minutes or until golden. (I have also made this into a cake too!)
1/8 C full fat coconut milk from a can
1/8 tsp vanilla extract
1 TBS coconut oil
mix well and top ( A little on each muffin goes a long way- full of flavor)
It will be runny at first but sets well in fridge.
I would store these in fridge because of the yogurt.
