Healthier MAC N CHEESE

FIRST THE SAUCE: (scroll down to the Mac N cheese)

Butternut squash cream sauce to put over pasta or over riced cauliflower.

A lot of things you can do with this.

Cook down (I cooked in oven but stove is fine in boiling water)

½ of a butternut squash (clean and peel it—or just buy it done already)

1 sweet potato peeled

When these are both tender you will purée it down in A FOOD PROCESSOR with

3 cloves of garlic

1 C of Almond milk

½ C Broth 

¼ C Nutritional yeast (this adds the cheesy flavor)

Salt and pepper to taste 

Depending on your thickness preference you can add less milk and broth.

Take back to the stove in a pot and let simmer while checking on this and stirring often. About 15 minutes should do it!

I know it sounds like a lot of effort but it is SO worth it and you can use this recipe on so many things!

I used this on my kids “mac and cheese”

I prepared a box of organic mac and cheese from Aldi as directed then I added 1 cup of this sauce to it. It was amazing and they had no clue. I had a heaping yellow container of this and if I was smart I would have added a cup of cooked broccoli to it.


You can also put this over Riced Cauliflower or Quinoa or a pasta of your choice!
