Italian Casserole with Hidden Veggies

If you have not noticed by now – I am all about simple- I don’t have a lot of time to be super fancy with the cooking. IT is quick- good and to the point!

Ingredients..

1 pepperoni (I used a whole one and chopped -look for good quality on these)

1 lb of lean ground beef

1 can black olives

1 bag riced cauliflower (Italian if you can find – walmart is where I got it)

1 carton of mushroom- chopped

1 onion chopped

1 bag of shredded cabbage (plain cabbage not coleslaw)

2 garlic cloves

2 green peppers

1 jar of Organic Spaghetti sauce

1 can of stewed tomatoes

1 package of fresh mozzarella pearls ( 8 oz)

1 large container of Cottage cheese


In a large pan on the stove over medium heat add a dash of Olive oil—chop your garlic and chopped onion and start sauté.


Add the chopped Green peppers, riced cauliflower, shredded cabbage and chopped mushroom

While that is all cooking- chop your pepperoni and olives and set to the side.

Now add your ground beef (raw) yes just put it right in there and cook it with the veggies….once this is browned add your pepperoni and your olives.


I then took a large casserole and sprayed it…and dumped all of this in….then I mixed the Jar of spaghetti sauce right in there and stirred it well. Kind of flatten it all out and layer the cottage cheese on this then top with the pearls!


Bake 375 for about 30 minutes…THIS WILL BE WATERY= so let it set for a bit before you serve!

MY KIDS HAD NO IDEA it was mainly veggies in there!
