Keto- Vegan & Barre 4 your BELLY

OK. I know. I have said it MANY times...I am not keto. If you tell me not to eat something I want to eat it MORE AND MORE. I was kind of a KETO basher, not long ago. I was concerned that all you ate was MEAT AND CHEESE. I mean, that is how I did it 15+ years ago, when it was all the rage. I would lose 10 pounds in like 3 days. Become super constipated (tmi-sorry). Weak and shakey. Then quit and gain back 20. That was the cycle of my unhealthy relationship with food way back when.


Way back when I was so incredibly desperate to be thin for vanity purposes only. Way back when I didn't care the unhealthy side effects the fad diets would bring me. Way back when I was only in it for myself.


Fast forward 2 sets of twins, and a husband (with high blood pressure episodes), friends and followers I am trying to help and with loads of studying and research to find the healthiest and best way to eat for anyone and everyone. I am going to dig in.

We became an 80 % vegan household in May of 2018. I became 100% vegetarian and about 90 % vegan about a year ago (I sometimes have cheese). We made this decision for Kevin's heart mainly. I then just progressed into feeling much better living this way. So it stuck.


Now onto the KETO.


I have a friend who has to limit carbs because of health issues. I started doing some research on this and I do realize that living a lower carbohydrate lifestyle can be very, VERY beneficial to a LOT of people. Kevin, for one. Also, people with heart conditions, diabetes, allergies, etc. (**always consult with your physician before starting a new diet)


I want to help. I want to come up with a KETO (ish) way to live all while not having to resort to red meat and other high fat processed foods. So, I am doing it. I am going to give this a whirl. Share my recipes and what I am eating with ya'll. Hopefully this can help those of you who just can't figure out why your digestion is unsettled. You're feeling maybe bloated or puffy a lot. You can't seem to break through a weight loss plateau. You want to drop a few pounds. Or, you just want to see if this could give you more energy? Maybe you have a friend who needs this or a relative.


I started yesterday. (I would mainly get all of my protein from beans and quinoa that is why this is challenging for a non meat eater.) Yesterday was NOT great but it was good. I snacked on seed balls most of the day. I had a protein shake (I changed from my normal shake to this temporarily for a lower carb count and clean ingredients) with coconut milk. For dinner I made riced cauliflower with roasted vegetables and an avocado. I also had an endless amount of flaxito's (flaxseed dorito's)**recipe below with guacamole. I also snacked on a few Kim's Pops. They are low in carbs and have a great crunch factor! I let myself eat as much as I wanted all day so I would not give into my old temptations...GRANOLA and RICE (my favs). I felt full most of the day but those dang seed balls! I went overboard on as they are addictive! **note I mainly will eat the same thing daily during the weeks. I find this much easier to stay with healthy eating. It takes the guess work out and keeps your mind off of food. Simpler is best.**


I don't necessarily feel lighter or any different today as I am sure I overate yesterday. But, I do feel positive about this journey. I am hoping to enlighten you along the way.


NOW to the BARRE workout...

I love BARRE (& pilates) because the toning effects work quite quickly if you stick with a few minutes daily. You can do these moves from basically anywhere. You won't feel like you're a sweaty mess and need to shower after. Take at least 10 minutes to work on core strength daily and you will feel stronger and more powerful all through your body in no time!

**Flaxitos (from Vegan Keto cookbook)

1 C ground flaxseed

1/4 c nutritional yeast (adds cheesy flavor and protein!)

1 tsp garlic powder

3/4 c water

mix together well. I placed the sticky dough between two layers of parchment paper and rolled out flat. Baked at 350 degrees for about 30 minutes. Cut into squares with pizza cutter. I ate half the batch lol!
