How many times do you pack a salad for lunch with good intentions only to open it at noon and the lettuce is all soggy. You end up throwing it our or even worse....muscle down the mush because you are starving!

Here are 3 ways to make salad WITHOUT that soggy lettuce.

No lettuce salads are the way of the future friends!

Colorful bean salad . 1/2 C white beans 1 cup diced pineapple  Handful tomato 1 diced cucumber  1/2 Avocado diced  1/2 chopped red onion Drizzle olive oil and salt and pepper on and enjoy!!

Chicken Quinoa Salad

I love this because it is packed with protein and vegetables!

This makes a HUGE batch you might want to cut in half

1 whole chicken boiled and shredded  (or just buy a cooked rotisserie chicken)

2 cups chopped carrots

2 cups chopped celery

1 chopped onion

1 cup small colored peppers chopped

1 packet of Simply organic greek Mediterranean herb dip or a Ranch packet could work

2 cups plain greek yogurt

Salt and pepper

2 tbs of olive oil

2 cups cooked quinoa

4 oz Feta crumbled cheese

MIX THE GREEK YOGURT AND THE packet of Mediterranean Herb dip together first….

The hardest part of this is the prep of chopping all the vegetables and cooking and shredding the chicken after this is all done you just throw all of the ingredients in a huge bowl and stir well!

Refrigerate and have 1.5 Cups for a GREEN:RED:1/2 Yellow and ½ a blue

** buy organic chicken–buy all your meat organic! Please!! And dairy

Creamy Crunchy Crab salad

ANOTHER GREAT way to get in some healthy foods on the go- pack this for work and gets some protein and veggies in all in one quick meal!

1 package of crab (I used imitation- however try to find organic if you can)

3 stalks of celery

1 large carrot cleaned

1 can of water chestnuts

2 small cucumbers peeled

Chop the veggies and crab and water chestnuts up fairly fine but not crazy small

Put all in large bowl

Mix in

¼ C of plain greek yogurt

¼ C Bolthouse farms Ranch dressing (or any yogurt based)

2 tbs mayo

¼ c of crumbled feta cheese

1 tsp olive oil

Salt and pepper to taste

Taste best after chilled a few hours

Have one cup for ½ red ½ green 1 orange and ¼ blue

Add a side of spinach to complete your green!

So so good!! (Don’t like crab? Use chicken or tuna!)

MY CLIENTS : have a CUP of the crab salad for a RED- It makes it simple and it is GOOD! HAVE over a cup of SPINACH TO GET YOUR GREENS IN for a GREEN!
