Peanut Butter Banana Breakfast Bars (super simple)

I won't bore you with details as to why I must have a grab and go breakfast for the kids. Don't all mom's need that though. Are we not always on a schedule of some sorts feeling behind on the daily?

If I don't offer the kids something they will eat then I am fighting with them to even eat at all in the morning. I almost always make some sort of muffins or bars as a staple for our weekly morning breakfast. Then we are not always resorting to boxed cereal. I feel better. They eat em. It is all good.

To make the oat flour you just use your food processor or blender. Add 3 cups of old fashioned oats and pulse down to a flour like consistency.

You will need.

5 ripe bananas

The oat flour you just made

6 oz of chocolate silk yogurt (or any yogurt could work)

1 egg

1/4 C peanut butter

1/8 C pure maple syrup

6 oz of chocolate silk yogurt (or any yogurt could work)

Mix 3 of the bananas with rest of ingredients. Pour into nonstick baking dish (I used 8 x 8). Top with slices of 2 bananas and a handful of dark chocolate. Bake for 20 minutes. Let set 5 minutes before serving. ENJOY! (store in fridge)
