Rueben Bowl (plant based)

The Perfect Plant Based Rueben Bowl

You will need..

2 cups of chopped cabbage (I used red then it looked like meat and Kevin seriously had no idea)

1 C walnuts chopped

1.5 C Sauerkraut

1 TBS Ghee (butter will work but the taste of ghee is way richer and lactose free)

1 onion chopped

½ carton mushrooms 

½ C mayo

1 pickle chopped 

1 TBS vinegar

3 TBS ketchup

Salt and pepper

In a large skillet on stove add your Ghee. Keep on medium heat. Once melted a bit add the cabbage, onion, walnuts and mushrooms. Once they start to cook down add the sauerkraut. While this is all cooking mix your sauce. In a bowl add the mayo, pickle, vinegar, ketchup and a dash of salt and pepper. Mix well. Add the sauce to the vegetable mixture. Stir and keep on low to simmer about ten minutes. You will need more salt and pepper to your liking. I ate this in a bowl for one meal and then I put it on a St. Josephs lavish bread wrap for another. You could but this on rye toast as well!
