Spaghetti n Meatballs (w/VEGGIES snuck in)

Meatballs (with added veggies snuck in) *I like to bulk up my meat so it goes further and it has more nutrients in it for the kids and the hubs.

2C shredded zucchini 

1 lb of grassfed beef

½ C almond flour

1 T Italian season

1 tsp garlic powder

Salt and pepper to taste

1 C cooked quinoa

Mix all of above together and make into balls. Mine made 27. Line parchment paper on a cookie sheet and bake at 350 for about 20-30 minutes. Serve over a mixture whole grain noodles and Spaghetti Squash with Sauce. (To bulk up your sauce scroll down)

To make my sauce go longer and add more power I did this…

Cooked down one cup of butternut squash and 1 C of zucchini. I puréed this in my food processor with a garlic clove until smooth. Then I added 1 jar (maybe 2 if you need more) of Organic no sugar added spaghetti sauce. I let this mixture simmer in a pot over stove until the rest of the dinner was ready. Everyone loved it and no one noticed! (Sneaky)
