Spanish "RICE" w/ Cilantro LIME Meat MUFFINS

The KIDS LOVED THESE THE HUBS loved these. It was such a winner. I hardly ever have the kids finish their vegetables before their meat but today THEY DID and ASKED FOR MORE!! WHA WHA- Yes not lying.. SO GOOD!

Cilantro Lime Meat Muffins

1 LB of ground chicken

1 bag frozen cauliflower (12 oz)

1 onion chopped

1 Egg

1/2 C Carbquick OR Almond flour

1 Bunch of Cilantro chopped

2 Limes

1/2 tsp chili powder

1/2 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp basil

1/2 tsp cumin

dash of salt and pepper

Add all of this in large bowl with the JUICE of the two LIMES and mix together with your hands well.

Fill a muffin tin that has been SPRAYED with nonstick spray with the mixture and bake in the oven at 350 for 20 minutes or less depending on preference.


Spanish Rice:

2 Bags Frozen Cauliflower

2 Onions Chopped

1 C frozen Corn

2 Colored Peppers diced

Clean Taco Season

Use a LARGE skillet on the stove and coat with olive oil or I used GHEE.

Add all of the vegetables to the pan and saute until start to become soft. Add in the seasoning and 1/4 C of water. Keep stirring occasionally and let simmer for 15-20 minutes. (now check your meat muffins!)
