SO SO GOOD!
BAKE YOUR SQUASH FIRST ( I made the mistake and did not do this)
Peel your butternut squash
Slice it thin (forms like circles)
Bake in oven until tender- with a little olive oil and some salt and pepper- 425 for about 20 minutes …
Chop up a carton of mushrooms
Chop an onion
Chop a handful of spinach
You need one large container cottage cheese
¾ cup of shredded mozzarella
1 jar of organic pasta sauce
LAYER : I used a 8 X 8 baking dish
Layer of squash
Layer 1/2 of the veggies: Spinach, Mushrooms, Onion
Top with a smidge of olive oil
1/2 the Sauce
Then a layer half of cottage cheese
Olive oils (tiny bit)
Top with mozzarella
Bake 350 degrees for about 30 minutes
NOTE: you may not even need the mozzarella your call!
So so good!!
