Tuscan Chicken Breast (lower carb)

Tuscan Chicken Breast

Easy, delicious and light this recipe will not disappoint you with the spring and summer months to come! 

You will need:

1 pkg of Chicken breast (organic if possible) about 1.5 lbs

1 jar of Roasted Red peppers

1 container of fresh basil leaf ( I found at Walmart by the salads)

1 pkg of sliced provolone cheese

1 jar of pesto of choice

You will need to clean and flatten out your chicken breast a little. I usually rinse off with water then place on counter with sarane wrap over the top of one breast at a time and use my kitchen “hammer” and pound it out just a bit to make it wider and flatter. 

Coat your baking sheet with cooking spray (or you could grill these). Lay your chicken breast out and top each one with

1 tsp of pesto

A few slices of your pepper

1 basil leaf

½ slice of the provolone cheese 

Now, you could roll these up and hold them with a toothpick for of a more “stuffed” chicken breast or just bake them flat if easier.

I baked on 350 for 20 minutes or less until golden brown.

Serve over a bag of cauliflower rice for a complete meal of health and perfection!
