🧘‍♀️Yoga Playlist,😬 Keto-Vegan, 😎Class Schedule this Week

I am not going to lie to you and say it has been easy being home for the past 3 weeks. I recently was asked by my editor to write a column providing tips helping parents who have now become stay at home parents due to schools being closed. She thought I would have advice seeing how I have been home for the past 6 years with my four littles. I should have loads of advice, right? I mean, I wrote an entire book about it! I felt stumped though. It has been a lot harder than I expected.


It is more difficult than I have imagined. The kids are older. They miss their friends. They miss their teachers. They miss structure and schedule. I miss it too. It has been hard to explain to the them. I don't want to create worry in their little minds on why we are at home. We call it the "sickness" and that is why everything "is cancelled".


Kevin has been much busier at work as everyone is having everything delivered now. My mom is back working as a nurse. So, we really have NO interaction with really anyone.


The only thing that has helped, and that is even hard to do, is to have a set schedule again. For me and for them. I am acting as if I am still "working" and as if they still have school , at least for the mornings. It sets the tone for the day when we start it off on the right foot.


I continue to teach my classes in the morning, per the usual. We set up school in the dining room. We do a little school work, show and tell, snack, recess, song times. I don't put much pressure on them or me though. If it isn't going well we end early. If it seems to be jiving we continue through the day. After lunch we end up just going outside for the afternoon. We hike to the creek. Pretend fish. Take a tractor ride. Do "chores". Anything to just keep going. Keep active. Keep them busy so they are not fighting with one another all day. (Something they seem to be doing a lot of lately.)


It has been tough. I have to admit. Tough to find our new normal. Just like anything new. It is uncomfortable. You think it isn't going to work. It can be stressful and you might think it is just not worth it. After we get through this uncomfortable and start to kind of find our groove we will all survive this new normal (hopefully not for very long).


The best advice I am going to give you is this. GET INTO A ROUTINE for YOURSELF.

START your day with something for YOU. A meditation, prayer, a little time in silence. Or, even better, a workout. I will continue to offer my gifts and talents to ya'll as long as I feel like it is helping you and is working for my fam and home too. This is my little "outing" too, when I see your faces and you see mine.

And lastly, how is my VEGAN KETO plan going??

Not going to lie. I have felt insanely bloated from all of the extra fiber. I have been feeling heavy and unsure if this is for me. Again, when I am uncomfortable, it might just be working. I will give it another week or two. I must share the most amazing recipe I leaned on this week. I ate this soup every single day and it was SO GOOD!

Based off the book Vegan Keto

I made a few changes

Cut and clean one head of cauliflower.

Add it to a soup pot on the stove over medium heat with 2 TBS ghee (or olive oil).

Chop one onion and 4 garlic cloves and add to it.

Add: 2TBS nutritional yeast

1/4 C vegetable stock

the juice of a lime

1 TBS coconut aminos or soys sauce

1 tsp sriracha sauce (optional but amazing)

1 teaspoon ginger

Salt and pepper to your desire

Saute the vegetables until tender.


Once the vegetables are tender you will pour all into a blender or food processor WITH

1 can full fat coconut milk and 1 cup Vegetable Broth. Blend until creamy and smooth.


Return to pot to warm but stir constantly so bottom doesn't burn.


ENJOY! I am going to double batch for this week!

And I am also living off flaxitos and guac!

A lot of raw vegetables and chai pudding (recipe to come this week!)
